Café St Tropez is an up-market café/restaurant in the Sanctuary Cove Village on the Gold Coast in Queensland. Its owner, Steve Fenton, requested that John add “some life” to the café’s table menus in order to hopefully increase the “per table spend”.
John revolutionised the menus completely by adding photographs and tempting descriptive copy for all of the meals. You will note that in particular, the café’s coffee and desserts menus provide a mouth-watering temptation to all diners.
The result from launching these new menus was an instantaneous increase in the “spend per person” with trade increasing by nearly 30% per person within the first fortnight. Just goes to show what a bit of “theatre” can do in an industry where one would think “words and pictures” should be paramount.
